The vacation was jampacked since it has been more than a
year since I last arrived. Furthermore, we decided to drop by Iloilo for some
sightseeing. We went to Pototan (still can’t manage to say the name with a
straight face) which is the Christmas capital of Visayas. I was wondering how
special the place was to merit such title, and I immediately saw the reason why
the moment I arrived. The lights are everywhere, and since there are no tall
structures around, the bare night sky totally complements the bright lights
adorning the trees and buildings.
Also inserting a random picture of my empty plate after I
chowed down my inasal like there’s no
tomorrow. Because how can you be in Bacolod and Iloilo WITHOUT eating as if
it’s the end of the world? I think I gained around 10 pounds in just four days
(the fact that I can’t remember how many times I ate lechon is already an indicator). It's always Christmas for my stomach whenever I eat perfectly-cooked inasal.
Anyway, I digress, so here’s the plate, with the most amazing food invention in my book: CHICKEN OIL!
